Sambar refers to the south Indian veggie made with potatoes as a main ingredient. This one is added with seasonings and spices so as to make a perfect serving for south Indian dish and it can be individually made at home as well.
How to Make Sambar
¼ cup of moong dal
¼ cup of tur dal
¼ cup of masoor dal
½ tsp tamarind
5-6 lady fingers
Salt, chili and pepper to taste
2 tomatoes (large sized)
½ tsp cumin seeds
½ tsp fennel seeds
2 tsp ghee or butter
a pinch of asafetida
4-5 lady fingers
2 boiled potatoes
200 gram other vegetables like onions, carrots, peas etc finely chopped
Garnishing:- With coriander leaves
Method: How to Make Sambar
1. Take the pressure cooker and fill it with 200ml water. Now add all the types of dal we have to it and then cook till the cooker gives three whistles. Take the cooked dal off the stove and keep it aside.
2. Take a pan and then add some cooking oil to it. Add the cumin seeds and fennel seeds to it and fry till you hear the splattering sound come out of it. Now add red chili, chopped veggies like lady finger, onions, peas, carrots etc and fry them well. Meanwhile, make some tomato puree while blending the tomatoes in a blender.
3. Mash the cooked dal along with this mixture and then add the sambar powder and the other spices which we mentioned in the Ingredients. Keep the tamarind pulp filtered and add it afterwards.
4. Add the pinch of asafetida and boiled potatoes to it and then whisk and mesh properly. Now cook for a while again and then serve the sambar hot after adding the tomato puree to it that we prepared in the step two.
It is better if the boiling, removal of pulp from tamarind etc is done earlier and the things are kept ready before beginning the process as it can save a majority of your time.
